Korean Beef Sliders Are The Perfect Addition To Your Bar And Grill Menu

Sliders are the perfect item to add to your bar and grill menu. You can include a smaller portion (2 or 3 sliders) as an appetizer option or a larger portion ( 4 or 6 sliders) as a meal option. While standard, burger sliders are good, these unique, Korean-inspired beef sliders are even better.

Shredded, barbecue beef and pickled bean sprouts combine to make these flavorful sliders.  The beef mixture needs to cook for 3 – 4 hours, so consider preparing it the day before and storing it in the cooler so you can serve sliders to-order the next day. This recipe should make about 40 sliders.

Ingredients:

  • 4 pounds beef brisket (this is usually 2 small briskets or one large one)
  • 1/2 cup soy sauce
  • 3 tablespoons mirin
  • ¼ teaspoon white pepper
  • 1 teaspoon Asian five spice seasoning
  • 1 tablespoon cornstarch
  • 3 cups hoisin sauce
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon sesame oil
  • 4 cups bean sprouts
  • 6 tablespoons rice vinegar
  • 2 teaspoon kosher salt
  • ½ cup warm water
  • 2 tablespoons white sugar
  • Slider buns

Directions:

Place the brisket in a large pot. Season it with the five spice seasoning and white pepper. Pour the mirin and soy sauce into the pot, and then put the cover on. Place the pot in a 325 degree F oven for 2 1/2 hours. Stir the sauce and spoon it over the meat every 30 minutes during cooking.

Combine the sesame oil, ginger, cornstarch and hoisin sauce in a small bowl. Whisk it to combine. Add this to the pot with the beef, and return it to the oven to cook for an additional 30 minutes.

Remove the meat from the oven, and let it cool until you can handle it comfortably. Shred the meat, and mix it with the sauce.  Place the beef in a covered container in the cooler. You can reheat individual portions as needed.

You can prepare the pickled bean sprouts while the beef is cooking. Simply combine the sprouts, rice vinegar, water, white sugar and kosher salt. Mix well, and let sit at room temperature for at least 2 hours. Then, store in the cooler until needed.

To assemble the sliders, begin by reheating a portion of the beef. Placing a few scoops in a saucepan on the stove works well. Place a generous portion on each slider roll, and top each slider with a few of the pickled bean sprouts.
